The Yummiest Breakfast: German Pancake

One of the breakfast's we love to enjoy the most, normally on a weekend, is a German Pancake. We make a large one to feed the whole family but still rarely have any leftover. It's literally one of the easiest breakfast's to pull together and the kids always love to help prepare it. I use 6 eggs in this recipe because I have a large pan that can manage it, and if I have the time I'll add a bit of sourdough starter and let it sit for a little while before placing it in the oven.


Ingredients:

60g butter

6 eggs

1 cup flour

1 cup milk

1 tsp cinnamon

1 tsp vanilla


Place cast iron pan in oven while preheating to 220c.

While heating mix eggs, flour, milk, cinnamon vanilla (and sourdough starter if using) well with a blender or immersion blender.

Once the oven is preheated take out the ban and place butter in the pan. It will melt very quickly. Pour mixture into pan and then return to oven. Bake for 12-15 minutes. The pancake is ready once puffy and brown on the corners. Remove and enjoy!

We slice ours up and serve with berries, maple syrup and a little dusting of icing sugar. So delicious!

(You could double this recipe - it would just add 3-5 mins to the cooking time)
